Greek fruit salad
Recipe by300g Grapes
200g Cherries
400g Strawberries
100g Walnuts
1 handful of fresh mint
2 tsp Elderflower Cordial
1 tbsp Greek Honey
4 Scoops of Vanilla Ice Cream
1 tsp Dried mint
Prep. Time → 180 (including frezeing grapes) min
Cook Time → 15 min
1. Start by taking a tip from Jamie Oliver and place your grapes in the freezer this will give them an excellent texture and flavour do not remove for at least 3 hours if not overnight
2. If you’re using fresh cherries pit them and use another Jamie Oliver technique by placing them in a bowl of Ice cubes 30 minutes before preparing the salad this brings out brilliant flavour in them though the tinned cherries are a good replacement if they’re not in season
3. Remove the stalks from the strawberries and halve them adding them to a large mixing bowl
4. Take the grapes out of the freezer and add to mixing bowl along with the cherries and walnuts
5. Roughly chop the fresh mint and add to the mixing bowl
6. Take the elderflower cordial and drizzle over your fruit for reasons I don’t understand this brings out the best in them
7. Next add a bit more natural sugar by drizzling you’re ingredients with Greek honey and mixing all you’re ingredients to allow the flavours to mix and give a rustic look
8. Finish with a scoop of Ice Cream (though if ice cream isn’t your thing you could always use Greek yoghurt) and sprinkle the dried mint over the ice cream and salad
9. Serve immediately and have everyone get stuck in
