Green Chile Stew of Keith Strasburger - Recipefy

8 green New Mexico Chiles, roasted, peeled stems and seeds removed and chopped.
2 pounds lean pork cut into 1 1/2 inch chunks.
2 tablespoons olive oil.
2 large onions, chopped.
3 cloves of garlic, chopped.
2 small tomatoes peeled and chopped.
1 large potato, diced.
2 quarts of beef broth.
1 teaspoon cumin.

1. Brown pork in the oil, then remove and drain.
Add onion and garlic to oil and saute' till soft.
Place all ingredients in kettle and simmer for 2 hours or until the meat is very tender and begins to fall apart.
