Harvest chutney
Recipe by2 lb peeled and cored baking apples
1 lb onions, peeled
2 lb plums
3/4 lb tomatos (green or red)
1/4 lb preserved ginger
12 dried chilli peppers
1 clove garlic
1 lb seedless raisins
1 1/2 lb brown sugar
1/4 cups salt
1/2 tsp black pepper
2 tbsp pickling spice
2 cups malt vinegar
1. Put apples + onions through a coarse mincer.
2. Wash and stone plums and chop into small pieces with the tomatoes(skinned if ripe).
3. Chop finely the ginger, garlic and chillies.
4. Put everything into a large pan. Bring to a boil gently stirring until sugar is dissolved.
5. Boil, stirring occasionally at first and continuously towards the end, for 1 1/4 to 1 1/2 hours.
6. Pour into warm bottles and seal.
