8 cups tomatoes
2 onions, chopped
1 1/2 cups celery chopped
1 green pepper
3 bay leaves
4 tsp salt
1/2 tsp black pepper freshly ground
1 Tbs garam masala
3 Tbs sugar
10 basil leaves
2 tsp Worcestershire sauce
3 1/2 tsp citric acid

Prep. Time → 120 min

Cook Time → 45 min

1. 1. Remove stems and ends of tomatoes, chop and simmer till soft - cool till workable in next step.

2. 2. Run through food mill to remove seeds and skins.

3. 3. Add all other ingredients to (except citric acid) to tomato purée and simmer for about 30 minutes. Add citric acid and mix well.

4. 4. Process in blender in batches till smooth (or other method to purée)

5. 5. Reheat juice and fill jars.

6. 6. Seal in hot water bath for 35 minutes (45 for here at 4500 ft).

7. Tips and Alternatives

8. Brown the onions, peppers, and celery (more so the onions) a bit before adding to tomatoes.

9. Double the onions, peppers, and celery if desired.

10. Add hot peppers to make it spicy, or leave out an add at service.
