Ingredients for 2 people
baby spinach
chopped onions
chopped mushrooms
chopped asparagus
eggs
turkey
wheat tortillas
olive oil

Directions
1. Sauté spinach, onions, mushrooms and asparagus in a little olive oil.
2. Make a thin egg omelet.
3. Add the omelet to the tortilla. Top the omelet with the sautéed spinach, onions, mushrooms and asparagus.
4. Top with turkey (or whatever), fold like a burrito, and throw it on a panini grill.
