Herb crusted salmon

2 salmon fillets
1 lime, halved
2.5 tbsp parmesan cheese, grated
1 tbsp breadcrumbs
2 tbsp fresh parsley, finely chopped
1 tbsp olive oil

Prep. Time → 5 min

Cook Time → 20 min

1. Preheat oven to 350.

2. Mix together the breadcrumbs, parsley, Parmesan cheese, juice from the lime and 1 tbsp olive oil. Season generously with pepper.

3. Place the salmon fillets skin-side down on a baking tray and carefully spoon the herb crust onto the top. Bake in the oven for 10-15 minutes, or until the salmon is cooked through and the breadcrumbs are golden brown.
