Homemade pasta sauce

8 tomatoes (skinned, deseeded and chopped), place in a bowl of hot water to loosen skin which will make them easy to peel
2 onions finely chopped
3 cloves of garlic, crushed
2 small carrots or one large, chopped
1 stick of celery, finely chopped
1 cup of passata (approx 230ml)
1 cup of vegetable stock (approx 230ml)
Italian seasoning
basil (use fresh if you can) I used dry as I had no fresh on hand
salt and pepper to season
1. Method
2. Place a large saucepan over a medium heat and spray with Frylight or Pam spray.
Add the onions, celery and garlic and cook until softened.
Add the fresh tomatoes and carrots and cook for a further 4-5 mins.
Add the passata, stock and seasoning
Bring to the boil and cover and simmer for approx 1 hour
Add more stock if needed if sauce becomes too thick
Blend until smooth
You can put this into portion size tubs and freeze to use when needed.
