How to quick soak and cook dried beans

stockpot with lid that can go into the oven
2 tablespoons salt (plus whatever other herbs and spices you choose - we have used cloves of garlic with good results)
pound of sorted, dried beans (we have used this technique for black, kidney, pinto, and garbanzo beans with much success)
Enough water to cover the beans in the pot plus one inch

Prep. Time → 10 min

Cook Time → 90 min

1. Preheat the oven to 325 degrees

2. Rinse the beans

3. Put the beans, salt and enough water to cover the beans plus one inch above into the stock pot.

4. Put the lid on the stock pot and put it in the oven. Leave cooking for one hour.

5. At the end of the hour, check to see if beans are cooked. If necessary, leave beans in the oven for another fifteen minutes. Add more water if necessary to keep the beans covered.

6. At the end of the fifteen minutes, check again to see if beans are done. If not, continue checking every fifteen minutes.

7. Once beans are cooked to your liking, remove and let cool. Liquid can be reserved for cooking if desired.
