Inji Curry of Kitchen Snippets - Recipefy

Ginger/Inji-1/2 -3/4 cup chopped finely/grated
Tamarind paste-4 tblspn
Jaggery syrup-4 tblpsn
Mustard seeds-1/4 tspn
Fenugreek seeds-1/4 tspn
Dry red chilli-2
Green chilli-2 chopped
Curry leaves
Red chilli powder-1 tspn
Coconut Oil

1. Heat oil in a pan and fry chopped ginger till they turn dark brown.Grind it to a coarse paste.

2. Heat oil in another pan and splutter mustard seeds and fenugreek seeds.Add dry red chilli,green chillies and curry leaves.Fry till the raw smell goes.Then add red chilli powder and ginger paste.Saute well in low flame for 1 more mint.Then add tamarind paste and jaggery syrup.Mix well.Add 1/4 cup water and let it boil till the gravy thickens.
