Instant Pot Roast Pork of Lori McAleer - Recipefy

1 & 1/2 tsp salt
1 & 1/2 tsp pepper
1 tsp garlic powder
2 tbsp. olive oil, divided
2 lb. pork roast
2 cups chicken broth (I prefer unsalted)
1 onion cut into quarters
3 cloves garlic

Prep. Time → 20 min

Cook Time → 40 min

1. 1. In a small bowl, mix salt, pepper, and garlic salt.

2. 2. Rub pork with 1 Tbsp olive oil and season with salt mixture on all sides.

3. 3. Select SAUTE option to heat the IP. When HOT is displayed add 1 Tbsp. olive oil.

4. 4. Add seasoned pork roast and sear all sides, approximately 4 minutes per side.

5. 5. When roast is seared on all sides, press CANCEL and remove roast from IP, place on a plate and set aside.

6. 6. Add the broth to the IP and scrape bits from bottom with a spatula or wooden spoon.

7. 7. Place the trivet in the bottom of the IP. Lay the roast on the trivet and arrange the onions and garlic around.

8. 8. Cover pot, lock lid, and set steam release valve to sealing.

9. 9. Select MEAT/STEW (this is what I use) or Pressure Cook option and set cook time to 30 minutes.

10. 10. When the cooking cycle has finished allow the roast to sit in the IP for 10 minutes before doing quick steam release by opening valve to venting.
