Italian Cream Cake of Karyn Johnson - Recipefy

1 tsp soda
1 cup buttermilk
5 eggs, separated
2 cups sugar
1/2 cup butter
1/2 cup shortening
2 cups flour
1 tsp vanilla
1 cup pecans
1 can(3 1/2oz)coconut
Icing 1-8oz package cream cheese
1/2 cup butter
1 tsp vanilla
1 lb powdered sugar

1. Mix soda with buttermilk and let stand.

2. Beat egg whites.

3. Cream sugar, butter and shortening. Add egg yolks one at a time.

4. Add milk alternately with flour. stir in vanilla.

5. Fold in egg whites. Add pecans and coconut.

6. Bake in 3-9" layers at 325°F, for 25 minutes.

7. Mix cream cheese and butter well. Add vanilla.

8. Mix in powdered sugar a little at a time.
