Italian sausage & tortellini soup
Recipe by1 lbs Italian sausage (I use 1/2 spicy, 1/2 mild)
1 C chopped onion
2 cloves minced garlic
5 C beef broth
2 C thinly sliced carrots
2 C peeled, seeded, chopped tomatoes
1 1/2 C sliced zucchini
1 green pepper diced
1 8oz can tomato sauce
1/2 C water
1/2 tsp dried basil
1/2 tsp dried oregano
1 9oz pkg cheese and basil filled tortellini, uncooked
3 tbsp chopped parsley
1/2 C grated fresh parmesan
1. Discard casing from sausage. Brown over medium heat, in large Dutch oven, remove drippings, remove sausage and set aside.
2. Cook onion and garlic until onion tender.
3. Add sausage, beef broth and next 8 ingredients. Bring to boil, reduce heat and simmer, uncovered, 30 min.
4. Add tortellini and parsley, bring to boil, simmer 10 minutes. Sprinkle each serving with parmesan.
