Kare raisu (vegan)
Recipe by- 100g soy strips (dried)
- 4 1 / 2 teaspoons curry powder
- 4 tablespoons oil
- 1 medium onion into petals
- 2 cloves garlic, crushed
- 3 medium potatoes into large cubes (1.5 cmx1, 5cm)
- 2 carrots into triangles
- Hot water (about 500-600ml)
- 5 teaspoons cornstarch
- 4 tablespoons of soy sauce
- Salt to taste
- Chives to finish
Prep. Time → 15 min
Cook Time → 30 min
1. Moisturize soybeans in salted water with 1 / 2 teaspoon (tsp) curry powder. Squeeze and reserve.
2. In a wok (or large pot) and heat up the oil. Saute onion and garlic. Add 1 teaspoon (tsp) curry powder and mix well.
3. Add the soy strips and season with salt. Saute until lightly browned soybeans.
4. Mix the curry with the remaining cornstarch.
5. Add potatoes, carrot and curry mix with cornstarch. Stir well. Add hot water and the soy sauce.
6. Check the salt.
7. Cook for 10~15 minutes stirring occasionally. Will be ready when the potatoes are soft, without breaking.
8. Turn off the heat and finish with chives.
9. Serve with gohan (Japanese rice) hot.
