Key lime pie

1/2 cup fresh lime juice (15 key limes or 4 common limes)
4 to 5 teaspoons grated lime zest
395mL Sweetened Condensed Milk
4 egg yolks
1 Pack of Superwine/Roundwine biscuits
3 tablespoons of sugar
75g of butter

Prep. Time → 20 min

Cook Time → 30 min

1. Base
Break the biscuits up using a food processor
Add 3 tablespoons of sugar and mix.
Add butter and mix with a fork.
Press into non stick cake tin and bake at 180degrees for 10-15min

2. Filling
Zest limes and mix with egg yokes. Whisk for 2min and will turn off green.
Add condensed milk and beat,
Add juice and continue to beat.
Pour filling into cooked base and cook for a further 15min.

3. Cool to room temperature then place in the fridge for 3 hours.

4. Serve with whipped cream.
