Kim's thai steak noodle salad
Recipe by1-6oz pkg chow mein stir-fry noodles
Steak of choice, grilled med-rare
Baby spring mix salad mix
Sugar-snap peas
Cherry tomatoes, sliced in half
Cucumber, peeled and sliced
Red pepper, sliced thin
Red onion, sliced thin
Whole Cilantro leaves
Green onions, chopped
Sesame seeds, toasted
Blue cheese, crumbled
THAI PEANUT DRESSING
1/4 cup creamy peanut butter
2 tbsp rice vinegar
2 tbsp fresh lime juice
3 tbsp vegetable oil
1 tbsp soy sauce
2 tbsp honey and 2 1/2 tbsp sugar
2 garlic cloves and 1 tsp salt
1-inch square piece of fresh ginger
1/4 tsp crushed red pepper flakes
2 tbsp fresh cilantro leaves
Blend everything in blender.
1. 1. Grill strip loin or sirloin marinated in a bit of S&P, garlic, balsamic and olive oil. Cook it med-rare, let it rest. Cook noodles to desired texture and rinse and cool them ahead of time. Toss them with a bit of dressing and sesame oil to keep them from sticking. At the bottom of each plate spread out a handful of cold noodles and lettuce, top with veggies.
2. 2. Drizzle salad with peanut dressing, slice up the steak and fan out a few strips on top of each one. Sprinkle on roasted sesame seeds and blue cheese
