King prawn saag sw

- Fry Light
- 1 medium onion, chopped
- 1 garlic clove, crushed
- 2.5cm (1 inch) piece fresh root ginger, grated
- ½ tbsp medium-strength curry powder
- 1tsp ground coriander
- ½ tsp chilli powder
- 397gm (14oz) can chopped tomatoes
- 198gm (7oz) raw king prawns, heads and shells removed, de-frosted if frozen and patted dry on kitchen paper
- 100gm (3½ oz) baby spinach
- salt and freshly ground black pepper
1. Method
1. Heat a non-stick pan sprayed with Fry Light and stir-fry the onion for about 5 minutes until soft.
2. Add all the other ingredients to the pan, except the prawns and spinach, and heat gently until simmering. Cover the pan with a tight-fitting lid and cook for 10 minutes.
3. Remove the lid, add the prawns and spinach and stir-fry for 4-5 minutes or until the prawns are bright pink and the spinach has wilted.
4. Season to taste and serve.
