Kothimbir wadi
Recipe by1 wati Chanadal, 2 teaspoons rice flour, dhane and jeera powder, heeng, 4-5 green chillies, half inch ginger, salt to taste, kothimbir, pinch of soda
Prep. Time → 30 min
Cook Time → 20 min
1. Grind the green chillies, adrak and salt in a stone or mixie
2. Chop kothimbir finely and keep ready
3. Prepare the dough - add besan and rice flour, add a little bit of water and keep stirring, add the masala and keep stirring.
Keep stirring for a long time - this will help make the wadis crispy later.
4. Keep a vessel coated with oil ready to pour the dough.
Keep this in a cooker with water and remove the whistle
5. After stirring the dough for a long time the consistency should be like the idli batter. neither watery nor too thick.
6. Add a pinch of soda and keep stirring for a few seconds.
7. Add the kothimbir, stir and add it to the vessel coated with Oil
8. Place this in the cooker and keep it on a medium flame for about 15 minutes.
9. Remove and cut diamond shaped wadis.
10. Shallow fry on a pan. Roast some cashews and garnish the wadis with the same.
