2 lean lamb chops,boned
2 tablespoons of fresh rosemary leaves
1 oinon, thinly slliced
1 small carrot, thinly sliced
1 small potato, peeled and thinly sliced
1 tablespoon of olive oil
fresh rosemary,to garnish

Directions
1. Preheart the oven to 180.
Put the lamb in a small roasting tin linedwith
greaseproof paper, and sprinkle with a little of the rosemary.
2. Arrange alternate layers of onion, carrot
and potato on top of each chop.
Season and sprinkle with the rest of the rosemary.
Drizzle with oil and bake for 40 minutes.
