Lasagna Roll Ups With Cottage Cheese of Kelly Barton - Recipefy

2 cups marinara sauce (plus more for serving)
8 uncooked lasagna noodles
16 oz 2% cottage cheese, drained
1/2 cup grated parmesan cheese
1/4 cup chopped italian parsley
2 tbsp pesto
1 large egg
1/2 tsp salt
black pepper to taste
1/2 cup part skim mozzarella cheese (shredded)
basil or parsley for garnish

1. Preheat oven to 350 F.

2. Ladle about 1 cup sauce on the bottom of a 9x12 or large oval baking dish.

3. Meanwhile, bring a large pot of salted water to a boil. Cook noodles according to package directions, then drain.

4. In a large bowl combine cottage cheese, parmesan, parsley, pesto, egg, salt and pepper and mix.

5. Place a piece of parchment paper on a tray or on counter and lay out lasagna noodles. Make sure noodles are dry.

6. Take 1/3 cup of cheese mixture and spread evenly over noodle. Roll carefully and place seam side down onto the baking dish. Repeat with remaining noodles.

7. Ladle remaining sauce over the noodles and top each one with 1 tbsp mozzarella cheese.

8. Put foil over baking dish careful not to touch the cheese and bake for 50 mins, or until cheese melts. Makes 8 rolls.
