Lasagna roll ups
Recipe by2- 15 oz. containers Ricotta cheese
2 cups (8 oz) shredded Mozzarella
1/2 cup grated Parmesean cheese
2 eggs, well beaten
2 jars of your favorite prepared tomato sauce (tomato & basil works well)
1 package lasagna noodles
1 pound Italian sausage (ground or with casing removed)
Prep. Time → 40 min
Cook Time → 60 min
1. Brown Italian sausage (without casing) in a skillet.
2. Combine Ricotta, Parmesean, eggs, half of the sausage, and 1 cup of mozzarella in a large mixing bowl.
3. Pour about 2/3 of a jar of sauce into the bottom of a large rectangular baking dish. Sprinkle some of remaining sausage into the sauce.
4. Preheat oven to 350 degrees.
5. Prepare lasagna noodles as per package directions.
6. Drain pasta.
7. Lay cooked noodles out on wax paper, being careful to keep them a bit wet to keep them from sticking to one another.
8. Place approximately 1/3 cup of ricotta mixture on each noodle and roll up. Place seam side down in casserole dish.
9. Cover roll ups with about 2/3 - 1 jar of sauce. Sprinkle remaining sausage onto roll ups and sauce.
10. Cover with foil and bake roll ups for 45 minutes.
11. Uncover and sprinkle with 1 cup mozzarella cheese and bake for additional 5 minutes or unil cheese is melted.
12. Let stand 15 minutes and serve.
