Leah's monster munch salad
Recipe by3 eggs
1/2 lemonade
tarragon ( few stems )
3 tablespoons mayonaionse
1 tablespoon honey / maple syrup
salt and pepper
1 cos lettuce
1 carrot
1/4 cucumber
200 g tuna or salmon in water or oil
200 g canned cannelini or red kidney beans
1. 1.hard boil the eggs
2. 2. squeeze the lemon and snip the tarragon
3. 3. mix the lemon juice with the tarragon, mayonaise and honey/syrup in a small bowl with a little salt and pepper.
4. 4.separate the lettuce leaves, throwing away the course outer leaves. wash with cold water and drain in the colander.Tear into pieces and put into the large salad bowl.
5. 5.peel the carrot and grate into the dish. Dice the cucumber.Open the can of tuna/salmon, and drain, then break the fish into pieces with a fork.
6. 6.add all the ingredients to the salad bowl and mix gently.
7. 7. Drain the hardboiled eggs, rinse with cold water to cool quickly.
8. 8. Crack the shells and peel the eggs.
9. 9. Cut the eggs into thick slices and arrange on the top of the salad.
10. 10. Enjoy!
