Leek and potato bake

2 Leeks (sliced)
2 large potatoes (peeled and sliced)
Chicken Stock
1 clove of garlic
28g of parmesan cheese (HEa)
42g of mozzarella cheese (HEa)
Frylight or Pam Spray
Salt and Black Pepper
1. Method
2. Preheat oven to 200c of 400f
Spray a frying pan with Frylight or Pam spray.
Add sliced leeks and cook over a medium heat until slightly softened.
Spray a round shallow ovenproof dish with some Frylight or Pam spray. Cut the garlic clove in half and rub the garlic all around the dish.
Place a layer of leek in the dish, then a layer of sliced potatoes, sprinkle with the parmesan cheese.
Repeat the layers, pour over some chicken stock. You just want enough to stop the dish from drying out too much.
Top with the mozzarella cheese, season with salt and pepper and bake in the oven until the top is golden and the potatoes are cooked through.
This dish serves 2 quite a nice big portion, but you could easily serve 4 with this dish, just remember that it wouldn’t be a full HEa allowance if you do.
