Leek and potatoe soup
Recipe byx2 medium leeks, x1 medium onion, 350g of potatoes, 1 liter of chicken stock made with two stock cubes, 50ml of single cream , salt and pepper, x1 oz/25g of butter
Prep. Time → 10 min
Cook Time → 40 min
1. Peel the potatoes
2. Chop the onion, leeks and potatoes making sure the potatoes are thinly sliced
3. Fry the onion and leeks in the butter until soft but not browned.
4. Mean while make the stock up using both stock cubes
5. Once the leeks and onion are soft add the potatoes and the chicken stock
6. Bring to the boil and then simmer for about 30 mins
7. once the potatoes and leeks are soft remove from the heat and blend.
8. Add salt and pepper to taste and the cream.
9. Serve immediately
