Lemon Granadilla curd of Forbidden - Recipefy

6 large free-range eggs
200ml fresh lemon juice
zest of 2 unwaxed lemons
1 cup white sugar
200g cold butter, cubed
2 granadillas

1. Place eggs, lemon juice, lemon zest and sugar in a pot, mix together with a whisk. Heat very slowly, stirring constantly

2. When steam begins to rise, gradually add the butter to slow down the cooking process
Remove from heat if needed

3. Allow to almost reach boiling point and then remove from heat.

4. Once mixture has cooled to room temperature, add granadillas.

5. Serve on ice cream, in meringue base or sweet pastry base.

6. Store in fridge for up to 10 days
