Lemon poppy seed muffins
Recipe by2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup unsalted butter, at room temperature
1 teaspoon lemon zest
1/3 cup Truvia Baking Blend
2 large eggs
2 teaspoons poppy seeds
1/2 cup milk
Prep. Time → 15 min
Cook Time → 25 min
1. Preheat oven to 375 degrees.
2. Place 12 cupcake liners in a 12-cup muffin tin. Set aside.
3. In a large bowl, cream together butter, lemon zest, and Truvia until light and fluffy. Beat in eggs, one at a time.
4. Stir in poppy seeds. Mix in flour, baking powder and salt until just combined, making sure to not over-mix the batter.
5. Divide the batter evenly into the muffin tins and sprinkle with additional Truvia.
6. Bake for 25 minutes or until golden brown.
