250ml double cream
3 lemons, juice and zest
6 tbsp lemon curd
6 tbsp marscapone
4 tbsp icing sugar
fresh mint leaves

Prep. Time → 30 min

1. Whip the cream to form soft peaks

2. Beat together all the other ingredients except the mint

3. Fold the whipped cream into the other ingredients

4. Share mixture between 4 wine glasses and put into fridge to chill

5. When you're ready to serve decorate each glass with a mint leaf.
