Lemony lentil soup

1 tbsp olive oil
1 medium onion, peeled and chopped
2 medium carrots diced
5 cloves garlic minced
6 cups chicken/vegetable stock
1 1/2 cups red lentils
2/3 cup corn
2 tsp cumin
1 tsp curry powder
zest & juice of 1 small lemon
sea salt and fresh cracked pepper

Prep. Time → 15 min

Cook Time → 30 min

1. Stove Top Directions:
1. Heat oil in stock pot (med-high). Add onions & carrots, saute 5 mins.until soft. Add garlic cook for 1 min.
2. Stir in veg. stock, lentils, corn, cumin & curry. Cook to reach simmer. Cover & cook for 15 min.
3. Use hand blender & pureee soup til preferrd thickness.
4. Stirin lemon zest & juice until combined. Season with salt & pepper to taste.
