Lentil saag sw

Ingredients
- Fry Light
- 1 large onion, chopped
- 4 garlic cloves, crushed
- 2tsp ground turmeric
- 1tbsp curry powder
- 1tbsp garam masala
- 6 cardamom pods, crushed
- 1 bay leaf
- 454gm (1 lb) dried split red lentils
- 2 stock cubes, made up to 1¾ pints (2 Syns)
- 227gm (8oz) frozen spinach, chopped

1. Method
1. Heat a frying pan sprayed with Fry Light and fry the onion until golden brown.

2. Stir in the garlic and spices and fry gently for 1 minute, until lightly toasted.

3. Add the lentils and stock and season well. Simmer for 15-20 minutes or until the lentils are just tender, adding extra stock if the pan becomes dry.

4. Stir in the chopped spinach and cook for a further 5 minutes, stirring frequently, until the spinach is cooked. Season to taste.
