Lentil soup w/ soy chorizo (vegan)

Ingredients for 4-6 bowls
2 cups lentils
1 onion
3 carrots
2/3 cup soy chorizo
2 cubes of veggie bouillon
mustard
Directions
1. Soak lentils in water until soft
Put in a pot with 4-8 cups of water (or more, depending on how thick you want the soup to be)
Bring to boil, then cook on lower temp
Chop carrots and onions and add to the pot
Add bouillon cubes
Add chorizo
Cook until all the ingredients are soft
Pour in bowl, add mustard to taste
