Lentil & sweet potato soup (287 cals)
Recipe by2 tsp of medium curry powder
3 tbsp of olive oil
2 grated onions
1 grated apple
3 crushed cloves of garlic
Wee pack of coriander (chop off stalks)
Wee piece of fresh grated ginger
800g of sweet potatoes
1.2l of veggie stock
100g of red lentils
300ml of semi-skimmed milk
Juice of a lime
Prep. Time → 10 min
Cook Time → 25 min
1. Put curry powder in a large pan, then heat for 2 mins. Add the olive oil, stirring as the spice sizzles. Tip in the onions, apple, garlic, coriander stalks and ginger, season, then cook on a low heat for 5 mins, stirring occasionally. Peel, then grate the sweet potatoes. Tip into the pan with the stock, lentils, milk and seasoning, then simmer, covered, for 20 mins. Blend until smooth. Stir in the lime juice and check seasoning. Topped with roughly-chopped coriander
