Malva pudding

250ml castor sugar
15ml apricot jam
315ml cake flour
pinch of salt
5ml bicarbonate of soda
30ml butter
5ml vinegar
125ml milk
Sauce
250ml cream
200ml sugar
125g butter
pinch of salt
7ml apricot jam
Prep. Time → 45 min
Cook Time → 45 min
1. preheat oven to 180C and prepare oven-proof dish
2. Beat together butter and sugar until well combined
3. Add eggs and beat until mixture is light and fluffy
4. Put jam in jug, add bicarbonate of soda and dissolve in milk
5. sift flour and salt over the butter mixture, alternating with milk mixture
6. add vinegar and pour batter into prepared dish
7. bake for 45min or until done
8. Sauce:
Melt ingredients together
9. Pour over pudding as soon as removed from oven
10. Poke holes in pudding with fork to let sauce run through
11. PS. Don't have heart attack when sauce meets pudding and makes a loud and sudden hissing noise and bubbles at the sides. There is a scientific explanation for this. (I almost had a heart attack...)
