Mandarin mixed greens salad
Recipe by1/2 teaspoon butter, melted
1/4 cup almonds, sliced
1-1/2 teaspoons sugar
1/4 head lettuce, torn into bite-sized pieces
1/4 bunch romaine lettuce, torn into bite-sized pieces
2 medium stalks celery (about 1 cup), chopped
2 green onions (about 2 tablespoons), thinly sliced
1 11-ounce can Mandarin orange segments, drained
SWEET-SOUR DRESSING
1/4 cup vegetable oil
2 tablespoons sugar
2 tablespoons vinegar
1 tablespoon parsley, snipped
1/2 teaspoon salt
dash pepper
dash red pepper sauce

1. Melt butter in a large skillet over medium high heat until it just starts to foam. Add almonds and stir to coat them with butter. When the almonds are hot and slightly toasty, sprinkle with sugar and stir constantly as the sugar melts onto the almonds. This should take only a few minutes. Remove from heat and immediately pour onto a piece of parchment paper. Using two forks separate clumps; cool. Store in an airtight container at room temperature until added to salad.
2. Place lettuce and romaine in plastic bag; add celery and onions. Pour Sweet-Sour Dressing into bag; add orange segments. Close bag tightly and shake until salad greens and orange segments are well coated. Add almonds and shake.
3. SWEET-SOUR DRESSING
Shake all ingredients in tightly covered jar; refrigerate.
