Maori bread
Recipe byfor bug;
2 Cups plain flour
3 medium slices potato
1 tsp sugar
1 cup water
for bread;
5 Cups plain flour
1 tsp salt
1 tsp baking soda
Bug mixture
Prep. Time → 240 min
Cook Time → 45 min
1. Boil slices of potato with 1 cup of water until soft.
2. Cool to lukewarm and mix in the 2 cups flour and sugar to a paste.
3. Cover and stand in a warm place until the mixture has fermented.
4. Sift 5 cups flour and salt into a bowl and make a well in the center.
5. Pour in the fermented "bug" mixture and sprinkle baking soda over the top.
6. Combine and knead mixture for about 10 minutes, add a little more water if the mixture is too firm.
7. Shape into loaves or place the mixture into greased loaf tins. Bake at 450F (230C) for 45-50 minutes.
8. Very tasty with lashings of butter and peanut butter or great dipped in hearty soup. :)
