Marinated garden salad
Recipe by3 medium tomatoes
1 green bell pepper
1 small purple onion
1 medium cucumber
1 cup kalamata olive
1/4 cup olive oil
2 tablespoons red wine vinegar
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon dried oregano
8 ounces feta cheese, crumbled
2 ounces anchovies (optional), drained
Lettuce leaves (optional

Cook Time → 0 min
1. Cut each tomato into 8 wedges. Slice bell pepper and onion into rings. Peel and slice cucumber. Combine tomato, bell pepper, onion, cucumber, and olives.
2. Whisk together oil and next 4 ingredients; drizzle over vegetables, and toss.
3. Serve immediately with cheese; top with anchovies, if desired. Serve on lettuce leaves, if desired.
