Mathanga cherupayar parippu erissery/pumpkin moongdal koottu
Recipe byMathanga/Pumpkin-1/2 cup grated
Cherupayar Parippu/Moongdal-1/4 cup soaked in water for 10 mints
Green chilli-2 chopped
Turmeric powder-1/4 tspn
Salt
Grated Coconut-1/4 cup
Cumin seeds-1/4 tspn
For tempering
Coconut oil-2 tspn
Mustard seeds-1/4 tspn
Dry red chilli-1
Curry leaves-few
Grated Coconut-2 tblspn
Prep. Time → 15 min
Cook Time → 10 min
1. Cook cherupayar parippu/Moongdal in a pressure cooker adding enough water and little salt.Just cook for 2-3 whistles in medium flame.
Don't overcook the dal/parippu.
2. Then in another pan add grated pumpkin,turmric powder,green chilli and salt.Add little water and cook till the water dries up and the pumpkin becomes soft.
Meanwhile,gently crush together grated coconut and cumin seeds.Add this to the cooked pumpkin-dal mix.Mix well,add more salt if needed.Cover and cook in low flame for 2-3 mints.
3. Now heat oil in another pan.Splutter mustard seeds.Add dry red chilli and curry leaves.Add grated coconut also.Saute till coconut becomes golden brown.Pour this tempering into the pumpkin -dal koottu.
4. Mathanga Cherupayar parippu Erissery is ready.
