Meatball stew
Recipe by
1 cup cranberries
1 cup carrots
1 onion
2 inches ginger root
Leftovers (e.g. Thanksgiving turkey)
1 can beans
1 can diced tomatoes (and other cans, e.g. corn)
2 lbs ground beef,
2 cups turkey stock
To taste
breadcrumbs
olive oil, pepper
cumin
garlic powder
salt
red wine
Prep. Time → 60 min
Cook Time → 480 min
1. Chop fresh fruits and vegetables; combine in crock pot.
2. Cook on high for 2-3 hours, or on low for 4-6.
3. Add turkey stock and enough water to cover vegetables.
4. Combine meat, breadcrumbs, olive oil, pepper, salt, cumin, and garlic powder to make meatballs. Add to mixture with leftover turkey.
5. Cook another 4-6 hours on low
6. Add canned vegetables 0-20 minutes before serving.
