Mediterranean mussels with pommes frites
Recipe byoil, for deep frying
5-6 potatoes, peeled, thinly sliced into chips and dried (american fry style, not round)
40g butter
10ml olive oil
1 onion, finely chopped
3 celery stalks, finely sliced
2 garlic cloves, crushed and finely chopped
1 fresh red chilli. seeded and chopped
1,5kg mussels, beards removed
2 x 340ml beer
Prep. Time → 20 min
Cook Time → 20 min
1. pommes frites:
heat oil in pan to medium0high and add small handful of chips to oil
2. fry all frites in batches until crispy
3. remove from oil and sprinkle with salt flakes
4. keep warm in low oven
5. melt butter and olive oil in large saucepan over medium heat
6. add onion, celery, garlic and chilli, fry until soft
7. add mussels and cover pan
8. increase heat and add beer, steam for 3-4min, shaking pan from time to time
9. discard mussels that have failed to open (Very important)
10. serve with frites
