Mexican chicken

4 boneless skinless chicken breast
1-2 jars of your favorite salsa
shredded cheese, taco blend (optional)
brown or white rice and veggie of your choice (i like brown rice and green beans with this one)

Prep. Time → 10-15 min

Cook Time → 45-60 min

1. preheat oven to 350,
place chicken in glass baking dish, cover chicken in salsa. cover with foil or dish cover if you have one and bake 45-50 min.

2. Prepare rice and veggie of your choice according to directions on packaging

3. When the chicken has have 5 minutes left, remove foil, top with cheese (you decide how cheesy you'd like it, I only use a little) and bake for 5 min uncovered.

4. plate your rice and veggie, then chicken on top, using the salsa from the baking dish as your sauce.
