Ingredients
- Fry Light
- 1 red pepper, deseeded and very finely diced
- 4 spring onions, very finely chopped
- 1pk Schwartz Chicken Fajitas Recipe Mix (5½ Syns)
- 454gm (1lb) chicken mince
- 400gm (14oz) tinned tomatoes
- 1tbsp Worcestershire sauce
- 142ml (1/4pt) hot chicken stock, made with 1 stock cube (1 Syn)

1. Method
1. Heat a frying pan sprayed with Fry Light and fry the pepper and spring onion for a few minutes until softened. Add the packet mix & fry for 1 minute. Transfer to a large bowl.

2. Add the chicken mince and mix together. Divide the mixture into 12 balls & place in a large heat proof tray. Grill for 10 minutes, turning occasionally.

3. Meanwhile, place the tomatoes, Worcestershire sauce & stock in a saucepan and simmer for 10 minutes. Spoon the meatballs onto plates and serve with the sauce.
