Mexican rice

1 tbsp vegetable or canola oil
3 cups long grain white rice
6 cups water
2 tbsp tomato bouillon powder
2 tbsp chicken bouillon powder
1/2 onion (intact)

Prep. Time → 0 min

Cook Time → 25 min

1. Combine the water with tomato bouillon and chicken bouillon.

2. Heat the oil over medium high heat in a large pot.

3. Add the rice and cook until it just begins to brown, stirring continuously. When the rice starts changing color, immediately add the water.

4. Stir, then add the onion to the middle of the pot.

5. Turn the heat down to medium and simmer until there is no more water in the pot. It should take 20 minutes or so. Do not stir the rice while it is cooking.
