Mexican style black beans

1 can black beans, 1/2 cup salsa, 1/2 teaspoon cumin, dash cayenne pepper, 1 clove minced garlic, 1 tablespoon chopped cilantro, sour cream and extra cilantro for garnish.

Prep. Time → 5 min

Cook Time → 20 min

1. In a medium saucepan combine black beans, cumin, and salsa.

Bring mixture to a boil, then cover and reduce heat to low.

2. Let simmer for 15 minutes or until some of the liquid has evaporated and beans are tender, stirring occassionally

3. Add cilantro and cayenne, simmer for 2 minutes

4. Remove from heat. Garnish with sour cream and extra cilantro. Serve with white or Mexican rice.
