Mom's lemon squares
Recipe by
1 cup butter
1/2 cup powdered sugar
2 cups flour
Lemon Filling
4 eggs
2 cups sugar
2 lemon rinds, grated
4 tablespoons lemon juice
1/2 teaspoon lemon extract
Prep. Time → 30 min
Cook Time → 25 min
1. Mix first three ingredients together like you are making a pie crust. Pat dough into a 13 x 9-inch oblong pan. Bake 15 minutes at 350 degrees F.
2. Lemon Filling:
Slightly beat eggs; add sugar, lemon rind and juice. Mix.
3. Pour over top of hot crust. Bake 20 to 25 minutes at 350 degrees F.
4. Sprinkle with powdered sugar. Cool overnight at room temperature or 4 hours in refrigerator before cutting.
