Mommy's orzo chicken
Recipe by
2 large chicken cutlets
1-2 cups Orzo or white rice
2 tbsp. butter
1 medium onion (sliced)
small minced garlic clove OR garlic powder
1 can (10 3/4 oz) tomato soup
4 oz. canned mushrooms (buttons)
2 medium zucchini - sliced (do not peel)
1. Cut chicken in chunks
2. In 10 oz. skillet, over medium heat, melt butter, onion & garlic. Cook until onion is tender - stir occasionally
3. Add chicken and cook until chicken is lightly brown - stir frequently, turning chicken so all sides get brown
4. Add soup and remaining ingredients - stir over high heat until boiling
5. Reduce heat to low, cover, simmer - 20 minutes
6. Stir occasionally
7. Serve over Orzo or white rice (made separately) - read directions on box
