Morning glory muffins
Recipe by2 cups all-purpose flour (sometime I substitute 1 cup with 60% whole wheat flour)
2 tsp baking powder
1 tsp cinnamon
1 tsp baking soda
1/2 tsp salt
3 eggs
1/2 packed brown sugar
1/2 cup plain yogurt
1/3 cup vegetable oil (sometime I reduce this to 3 tbsp and add 1/4 cup applesauce)
2 cups grated carrots
1 apple peeled and grated
1/2 cup raisins - or dried cranberries
1/2 cup pepitas - or chopped pecans
1/2 cup shredded unsweetened coconut
Cook Time → 20 min min
1. In large bowl, mix together the carrot, apple, pepitas, coconut and raisins. Add dry ingredients and stir until evenly mixed.
2. In a small bowl whisk together eggs, oil and yogurt. Add to large large bowl and stir until evenly combined.
3. Spoon into prepared muffin cups (either greased or use paper muffin cups) bake at 350 for about 20 /25 min, until an inserted toothpick comes out clean.
