Mum's bobotie
Recipe by1lb Mince (Beef / turkey / pork or lamb)
1 onion (chopped)
1-2 teaspoon curry powder (too taste)
1-2 tablespoon Mango Chutney
small handful sultanas
1 tablespoon flaked almonds - broken up
2-3 teaspoon Fresh chopped parsley (dried if fresh not available)
1 apple (I use granny smith) chopped to 1cm dice
salt and pepper to taste
3-4 slices of slighly stale bread
1/2 pint milk
2 eggs
Prep. Time → 20 min
Cook Time → 40 min
1. Turn the oven onto 170C to pre-heat
2. Fry the onion until soft in a large frying pan
3. Add the mince and fry until browned and add the curry powder (the dish should be spiced not hot!)
4. Remove the crusts from the bread, cut into dice and add to the milk in a separate bowl
5. Add the Apple, Mango Chutney, Sultanas, Almonds and Parsley together with the salt and pepper.
6. Drain the now softened bread (leaving the milk in the bowl) and add to the frying pan and stir over the heat until fully mixed.
7. Remove from the heat and place in an oven dish (I use a lasagne dish) - do not press down too firmly. Add the eggs to the milk, whisk lightly and pour over the mixture in the oven dish.
8. Cook for about 30-40 minutes until the egg has set to a firm savoury custard.

There are many versions of this around. This is the one my mum taught me a long time ago and I've passed onto many others. Rachel Allens version (http://uktv.co.uk/food/recipe/aid/609735 - this is where I stole the photo!) shows how different these versions can be!
