N10 sticky toffee squares
Recipe by250g Margarine
250g Caster Sugar
1 Medium Egg (separated)
250g Plain Flour
pinch Salt
18g (about 2 heaped teaspoons) ground cinnamon
Walnut pieces / chopped pecans / chopped stoneless dates
Prep. Time → 10 min
Cook Time → 25 min
1. Preheat oven to 190C
2. Cream together the sugar and marg
3. Add egg yolk, flour, salt and cinnamon and mix well.
4. Flour an 8" tin (I use a silicone one) and place the mixture in it (smoothing the top with a palate knife).
5. Lightly whisk the egg white and spread across the top of the cake mixture (with a pastry brush if needed)
6. Cover with the topping of choice (dates, walnuts or pecans)
7. Bake for 5 minutes for 190C for 5 minutes and then 200 for a further 15-20 minutes checking to see if the slice is cooked with a skewer.
8. When removed from the oven allow to cool fully before removing from the tin and cutting into the desired shape/size. I got 8 desert sized pieces from an 8" tin.

It seems a bit strange to not mix in the egg white but this leaves you with a lovely crispy topping (a bit like a sugar glaze). Make sure you get the slices cooked through (my mistake the first time) but regardless they taste great. I did half pecan and half date though in the future I think I would do a mix of the two!
