No bake cheesecake ... this one is for strawberry but you can substitute it for any fruit
Recipe by• 250g digestive biscuits
• 100g butter , melted
• 1 vanilla pod
• 600g soft cheese
• 100g icing sugar
• 284ml pot double cream
• FOR THE TOPPING
• 400g punnet strawberries , halved and stoned
• 25g icing sugar
Prep. Time → 30 min
1. grease and line a 23cm loose-bottomed tin with greaseproof paper.crush the digestive biscuits and mix in the melted butter. push firmly into the bottom of your tin and put in fridge for an hour or more. put your soft cheese, vanilla and cream into a bowl and mix for a minute or so with an electric whisk until mixture goes fairly firm. carefully stir in the icing sugar and then put into your tin on top of the biscuit/butter mix. put this in fridge for an hour then take out and remover from tin onto a plate. for the topping, puree half your strawberries with the icing sugar and pour from middle over the cheesecake and place the remainder of the whole or sliced strawberries on the top.
