Norwegian cod stew
Recipe by2 fillets of cod cut into 1" chunks
2 potatoes
2 onions
2 cups full of chopped root veg such as carrot, celeriac, celery, etc
oil (olive/veg/peanut)
2 cups of veg or fish broth
1/4 cup of butter
1/4 cup plain yogurt or sour cream
salt
1 tsp mustard seed (ground)
1 tsp clove (ground)
2 tbl garlic minced
sprinkle of dill
1. Slice the onions thin
2. Caramelize the onions through a slow cooking method with a few spoonfuls of oil. Do not let the onions get dry!
3. Add potatoes, cod, root veg, broth, garlic, and half the butter
4. Cook at low-medium heat until the potatoes are done. This is great for a slow cooker.
5. Add the yogurt, a sprinkle of dill, and the rest of the butter, then serve.
