Omelette muffins
Recipe by8 eggs
1/2 cup plain greek yogurt
1/4 cup milk
1 cup shredded cheddar cheese
1 cup diced meat
1 tbsp butter
1/2 cup onion
2 cups fresh spinach
salt & pepper to taste
Prep. Time → 5 min
Cook Time → 20 min
1. Preheat oven to 350 degrees.
2. Sautee onion in butter over medium heat until translucent and golden. Add spinach and cook until wilted.
3. Meanwhile, whisk eggs, milk, and yogurt. Add all ingredients to this egg mixture.
4. Divide mixture evenly into a greased muffin pan and bake for 20 minutes, or until eggs are set.
