Orange chicken souvlaki
Recipe by2 Free Range Chicken Breasts chopped into cubes
300g Greek yoghurt
Zest of 1 orange
2 garlic clove chopped
6 tbsp lemon juice
2 tomatoes quartered
Olive oil
Greek Extra Virgin olive oil

Cook Time → 10 min
1. Start by creating a marinade by mixing the yoghurt, orange, garlic and lemon juice I based this marinade on a yoghurt dip for a goat dish so it makes a good party dip for special occasions as well (p.s. it cannot be used as a dip once the chicken has been marinating in it, it must be prepared sepratly)
2. Place the chicken in the yoghurt mix and marinade for 3-6 hours
3. If you’re using wooden skewers place in a bowl of water for at least 2 hours to prevent them burning when you cook on the grill of your choice
4. Place a griddle pan on a high heat or light the charcoal on the barbecue to get it super hot or if you’re using an electric grill to the highest temperature
5. Whichever grill you’re using brush with olive oil
6. Place the marinated chicken and tomatoes on skewers and brush with extra virgin olive oil
7. Grill for 5 minutes a side maximum though keep an eye on it cause yoghurt burns quickly
8. Place on the table and get the pita breads out for a nice grilled feast and every one dig in
